The online menu planning class is organized into 16 modules, in order to make the information manageable for students. Each module begins with an overview video from the instructor, explaining what will be studied and what activities need to be completed. Along with this video, all requirements are written out, to accommodate different learning styles. Each module has a discussion to promote student interaction, wherein the instructor acts as a facilitator/moderator. For the modules with many mathematical concepts, instructional videos were created to accompany regular homework and quiz activities. In addition, multiple guided practice worksheets are provided to student for them to apply what they are learning. One of the videos takes place in a test kitchen to demonstrate how the culinary math is applied to tangible food items, which is particularly helpful considering that most students in the class are culinary arts majors. Other videos involve the instructor walking through a real-life practice problem, slowly performing calculations to convey concepts to students. In addition to helping students understand concepts, these videos help to personalize and humanize the online learning experience. Students value seeing their professor and having interaction similar to what would occur in the classroom and these videos provide a creative means for accomplishing this.
